Treat your dog to wholesome doggy treats that give them great nutrition and proceeds from the sales go to the dog rescue Hound Haven.

5 Ways State & Allen is Promoting Green Dining in Dallas

State & Allen Kitchen + Bar is known for crazy good drink specials, an amazing Uptown Dallas patio, and delicious scratch kitchen dining. But did you know that we are also committed to protecting our environment?

 

State & Allen never wants to be “just another Dallas restaurant and bar.” We believe in giving back and in helping make this world a better place for us all. We are proud to say that over the years, we’ve been the recipient of various green dining awards, including the prestigious 2-Star Green Restaurant Award.

 

It’s the small things that add up, and here are a few of the simple things we are doing to go green:

 

1.    Compostable Paper Products

 

Have a to-go order at State & Allen or need a doggie bag? We offer to-go products you can feel good about. All of our to-go boxes are made by Ecotainer, a company that makes their containers with a plastic liner derived from plants; no Styrofoam here. And that bag that the box goes in….we get those from a company called Trellis Bioplastics. They are 100% biodegradable and will not harm the environment.

 

2.    Bring Your Own Mug. Get FREE Coffee!

 

Looking for a freebie? We want to encourage you to bring your own coffee mug in for Uptown’s best Sunday brunch, and we will give you a cup of joe for free! It’s coffee you can feel good about.

 

3.    Water is Optional

 

Most restaurants automatically bring water to the table when you are seated. A nice gesture, no doubt, but some may not want water. At State & Allen, we do it a little differently. If you’d like water, ask your server and we will gladly bring you a glass. And if not, we just helped conserve water by using less waste and less water and energy for cleaning the glass.

 

4.    We Recycle our Cooking Oil

 

Bet you didn’t know you could do that, did you? All of our cooking oil is recycled and then turned into other cool things like biodiesel.

 

5.    Recycle. Recycle. Recycle.

 

You may think recycling doesn’t matter or doesn’t add up, but at State & Allen we beg to differ. We recycle everything we can – plates, straws, napkins, cardboard, office paper, etc. And it adds up. We are proud to say that we recycle over 17,000 lbs of paper each month!

Our bistro favorites are a collection of farm-to-table, scratch kitchen specialties sure to delight even the pickiest eater. Bistro favorites are meant to be entrees, perfect for a dinner out with friends or a date night in Dallas.

On the bistro menu, may we recommend the brand new Crab Stuffed Manicotti, drizzled in a vodka sauce and served with asparagus, corn, and mozzarella toast. Or maybe a Berkshire Pork Tenderloin? Juicy tenderloin is wrapped in bacon and covered in a warm cider glaze, served alongside fingerling potatoes and an arugula salad. Either one is sure to please.

Burgers are a specialty around here, and we don’t take the term lightly. At State & Allen, you won’t find an average burger. How about giving the Sweet Heat Burger a try instead? On Tuesday, April 14, State & Allen Kitchen + Bar will be hosting a prix fix dinner in Dallas starring one of our favorite breweries – Lakewood Brewing Company.

The menu will be 5 courses, as follows:

  • Course 1: Pate Potstickers served with Lakewood’s Rock Ryder: Rock Ryder is a smooth American Rye Wheat that nearly everyone loves. Named for the cyclists who circle Dallas’s White Rock Lake, the beer has a dry finish, citrusy nose, and a touch of peppery rye. The perfect pairing for our potstickers!

 

  • Course 2: Carrot Curry Soup paired with the Hop Trapp brew: A Belgium style IPA, Hop Trapp is the perfect complex brew for the craft beer enthusiast and novice alike. Brewed with Trappit yeast, you’ll immediately sense the complexity of the floral hops and the bitter backbone this beer gives off.

 

  • Course 3: Organic Arugula Salad and Lakewood’s Till & Toil: Peppery arugula, topped with goat cheese, hazelnuts, and more, is balanced by Till & Toil, a fruity, crisp beer that is perfect for a Spring day on the patio.

 

  • Course 4: Beer “Can” Hen with Lakewood signature Lakewood Lager: The perfect pairing for any course, Lakewood Lager blends new and old – just like the Lakewood area of Dallas! It’s  a Vienna style lager that wins you over with its malty sweetness, bitter hops, and caramel finish.

No doubt, women make a huge contribution to society, let alone the restaurant industry! The month of March is Women’s History Month, a month when we celebrate and pay tribute to the countless women who have made this nation – and this state – great!

For the restaurant industry specifically, women make an invaluable contribution.

Countless women hold roles as restaurant owners, chefs, wait staff, hostesses, etc. In fact, over HALF of the restaurants in America are owned or co-owned by a woman! Boil that down to a state level: with 41,000+ restaurants in the state of Texas – supporting 1.2 million jobs and accounting for 10% of the state’s employment –it’s safe to say that women are pretty valuable to the overall balance and infrastructure of the restaurant industry!

State and Allen is proud to have many amazing women on staff, and one such woman is Eleanor Moore.

With over thirty years of experience in the restaurant industry, Eleanor recently joined us as the Controller for State & Allen Kitchen + Bar, Savoring Catering, and Calabrese & Winkler Holdings, LLC.

She began her career as a waitress early in her adult life, working her way up to hostess, and then short order cook. In 1980, she was offered an office position and jumped at the opportunity to learn the inner-workings of how a restaurant was run. She loved learning new things and seeing the corporate side of the restaurant business. She stayed with that company for 33 years, developing business savvy and hands-on experience into how a restaurant functions on the business side of things.

State & Allen is proud to have a woman with such experience and knowledge of the restaurant industry leading the charge!

Meet State & Allen's Founder - Jonathan Calabrese

For over 10 years now, State & Allen Kitchen + Bar has been cranking out some of the best food in Uptown Dallas, Texas. State & Allen prides itself on making food that is not only delicious, but unique and fresh as well, all while maintaining a fun and relaxed atmosphere. It’s a vision that began with founder Jonathan Calabrese.

 In 1996, Jonathan Calabrese graduated from the University of North Texas with a Philosophy degree in hand, ready to begin a career in health care consulting. That stint only lasted two years before Jonathan realized that his true calling was food. He enrolled in the Art Institute of Dallas where he excelled, graduating as the valedictorian of his class.

Upon graduation, Jonathan accepted a position with The Grape Restaurant in Dallas, Texas. Under the instruction of Executive Chef Brian Luscher, Jonathan learned how to run a kitchen with precision. And before he knew it, he and his best friend began working on a venture of their own – Savory Bistro in the Lakewood area of Dallas, Texas. As Savory grew, so did the positive reviews. Encouraged by his efforts, Jonathan began adding more restaurants to his portfolio. Our beloved State & Allen Kitchen + Bar opened in 2004, followed by The Nodding Donkey Sports Bar – the best sports bar in Dallas – in 2010. And we can’t forget about the company that started it all – Savory Catering – Jonathan’s catering business that he opened while still in culinary school.

 Today, Jonathan spends most of his time behind the scenes, handling all operations aspects of the company and working closely with Executive Chef Rhett Dukes on creating menus with lasting appeal.

New Beers on Tap!

At the end of last year, we told you about our new affiliation with TapHunter: a great resource to stay up-to-the-minute on what State & Allen Kitchen + Bar in Uptown Dallas, Texas has on tap! Here are a few of the refreshing beers we’ve recently added:

·        Samuel Adams Cold Snap: Part of Samuel Adams’ spring collection, Samuel Adams Cold Snap is an unfiltered White Ale. Both sweet and spicy, the beer offers smooth, subtle flavors of plum, orange peel, and freshly ground coriander. It’s refreshing with just enough bite. Definitely one to try and only available from January to March!

 

·        Ballast Point Big Eye: One of Ballast Point’s star beers, Big Eye is a smooth IPA that helped raise awareness for fine San Diego IPAs. Taking a cue from the early English sea travelers who put extra hops in their beers to help preserve them longer, Ballast Point uses both American Columbus and Centennial varieties to produce a strong Imperial Pale Ale. It’s hoppy and flavorful. A good accompaniment? Try our Togarashi Crusted Catch or a Hawaiian Pizza.

·        Lakewood Holiday Bonus: Brewed right here in Dallas, Texas, Lakewood’s Holiday Bonus is a signature holiday brew. It’s brewed from November – January, so come in and try it before it’s gone! With hints of chocolate and orange peel, it will warm you up on a cold winter day. This is a great dessert beer, so save this one for after the meal.
