You’re not alone. Summer hits and all we can think about is watching the waves crash and feeling the sand between our toes. While not all of us are fortunate enough to spend our summer seaside, State & Allen Kitchen + Bar brings you tastes of the sea – our way of helping you get your beach fix.

 

As with all of our dishes, State & Allen uses fresh, quality ingredients in all of our seafood dishes. In our Dallas scratch kitchen, we are always coming up with new favorites sure to whet your appetite. Here are a few of our new seafood menu offerings to try this summer!

 

Appetizer: Crispy Calamari

 

Fried calamari is one of our all-time favorites, and State & Allen does it up right with lightly breaded and spiced calamari is cooked to perfection and served with your favorite homemade dipping sauces – cilantro ranch or chili sauce.

 

Salad: Sesame Crusted Ahi Tuna Salad

 

Thick Ahi Tuna is coated in a sesame crust and seared rare, then placed on a bed of napa cabbage, carrots, radish, jicama, cucumbers and peanuts. A miso peanut vinaigrette is drizzled on the salad to finish it off.

 

Sandwich: Blackened Fish Tacos

 

Street tacos are one of our faves because of the fresh ingredients and simplicity in the dish. Try our blackened fish tacos, complete with a tangy slaw and house sauce.

 

Bistro Entrée: Crab Stuffed Manicotti

 

Delectable manicotti melts in your mouth when stuffed with fresh crab meat and cheese, then drizzled in vodka sauce. Served with corn and asparagus so you don’t feel as guilty about this rich dish!

State & Allen Releases New Entrees for Fall

As the weather changes, so do our tastebuds. Somehow we just start craving hearty comfort foods instead of our summertime favorites.

 

The chefs at State & Allen are no different that you and I, and that’s why they’ve cooked up some fabulous new bistro entrees to add to the fall/winter menu at your favorite Dallas restaurant.

 

Here’s the lowdown:

 

·      Toasted Butternut Squash and Manchego Ravioli: Oh how we love the rich flavor of Manchego cheese, and it’s perfectly accented in this dish. Al dente ravioli covered in smoked bacon, mushrooms, arugula, walnuts, brown butter, and calvados gastrique. Yum.

·      Filet Mignon: This is comfort food at it’s finest – but jazzed up the State & Allen way! Perfectly seared filet is served with our signature 3-cheese macaroni and cheese, roasted broccolini, and cab demi sauce.

·      Shrimp Fettuccine: Don’t pass this one up – it’s not your typical fettuccine. Fresh shrimp, bacon, sun-dried tomatoes, and a smoked fresno cream sauce are served on a bed of homemade fettuccine noodles. The result – comforting goodness.

·      Barrel Planked Salmon: Get your daily dose of seafood with our barrel planked salmon dish, served with roasted asparagus, red wine risotto, and rosemary butter.

·      Pan Seared Airline Chicken: Lots of hearty favorites, all in one dish! Pan seared chicken, seasonal vegetables, mashed potatoes, and a lemon garlic veloute to top it off.

·      Venison Osso Bucco: Fall favorites abound with venison, parsnips, and glazed baby carrots, drizzled with a black currant braise.

State & Allen Kitchen + Bar will be hosting a Goose Island vs. Jim Beam Whiskey night on Friday, Oct. 23 at 6pm.

 

What is it?

Our Goose Island vs. Jim Bean Whiskey night will feature a prix fixe menu with 4 courses. Each of those four courses will be accompanied by both a Goose Island and a Jim Beam menu pairing. What a fun chance to try some new flavors and have some great conversation around what you like more!

Full menu is as follows: 

1st Course: Goose Island Sophie vs. Jim Beam Jacob’s Ghost

·      Served with Shellfish Carpaccio: Shrimps, scallops, pea tendril, maitake mushrooms, almonds, pears, and French parsley, served with a homemade vinaigrette.

2nd Course: Goose Island Autumn Ale vs. Jim Beam Basil Hayden

·      Served with Crispy Sweet Breads: Expertly prepared sweet breads with acorn squash hash, kale, sunflower sprouts, palm sugar, and a balsalmic reduction.

3rd Course: Goose Island Bourbon County Stout vs. Jim Beam Signature Craft Rolled Oats

·      Served with Veal Osso Bucco: Delicious veal with brussel sprouts, a parsnip puree, and stout braise

4th Course: Goose Island Bourbon County Barleywine vs. Jim Beam Signature Craft High Rye

·      Served with Granola Crusted Fresh Figs: Figs are served over a bed of Hawaiian bread French toast, lingon berry jam, and molasses sherbert.

 

When and how much?

The event will take place on Friday, October 23 at 5:30pm at the best restaurant in Uptown Dallas. Seating is extremely limited, so you’ll want to get your tickets today at State & Allen or at stateandallen.com. Just a few tickets remain! At just $50 each, this meal is a steal!
