Salads at State & Allen are anything but boring.


We realize salads have gotten a bad rap, so for that reason, our team has worked hard to put together a menu of salads that are unique, healthy, and oh so delicious – just the way a gourmet salad should be. Let us introduce you to some of our favorite gourmet Dallas salads, available for order at lunch or dinner:


Kale & Broccoli Salad

We’ll start with the newest addition to the salad menu. Packed with antioxidants, our kale and broccoli salad is loaded with carrots, cucumbers, fennel, dried blueberries, spiced almonds, goat cheese, and a homemade lemon-herb dressing. It really is a great way to eat your greens and enjoy them too!


Sesame Crusted Ahi Tuna Salad

Here’s one you won’t find just anywhere: the Sesame Crusted Ahi Tuna Salad. Fresh Ahi tuna is seared, then sliced and placed on a bed of Napa cabbage, carrots, radish, cucumbers, jicama, peanuts, and our miso peanut vinaigrette. So good and filling, you won’t even realize you “just ordered the salad.”


Mediterranean Salad

The perfect go-to Dallas lunch salad, we highly recommend the Mediterranean salad with olives, artichokes, red bell peppers, and cherry tomatoes drizzled in a feta vinaigrette. And bonus: you’ll receive warm pita slices and hummus on the side.


The Original Silver Bowl Salad

No list of State & Allen salads would be complete without mentioning the granddaddy of them all, and our most popular salad – the Silver Bowl Salad! Aptly named because of the silver bowl it comes in, this salad is chock-full of goodness. We start with a bed of romaine lettuce, then pile it high with spicy chicken, orange slices, grapes, red bell peppers, bacon bits, and two dressings – the Caesar and the vinaigrette. So good!!

Bourbon 101: Understanding the Terminology

State & Allen

It all starts with one sip.


You take one sip of the good stuff, and you’re hooked. And as your love for bourbon grows, so does your interest in understanding what all the terms mean. Don’t you worry – State & Allen is here with a crash course in some of the most popular bourbon terminology:




Mashbill is simply the recipe that is used to create the bourbon. Each distillery has its own propriety method, using it’s own custom blend of corn, barley, rye, or other yeasts.


Straight Bourbon


Straight bourbon is bourbon that has been aged in its barrel for at least 2 years. In 1964, Congress passed laws around bourbon production, ruling that in order to be called bourbon, it must be aged in new, charred oak barrels, have at least 51% corn, have nothing added but water and yeast, be produced in the United States, and cannot be distilled more than 160 proof.


High Rye Bourbon


Bourbons are traditionally made with a blend of corn, rye, and barley. As you might have guessed, high rye means that the rye content is much higher than the average 8-10% rye. State & Allen carries several high rye bourbons including Basil Hayden, a light, spicy rye, and Bulleit, a rye that is a little more fruity.


Wheated Bourbons


As we mentioned, most bourbons use a blend of corn, rye, and barley, but there are some – called wheated bourbons or wheaters – that use wheat in place of rye for a blend of corn, wheat, and barley. Maker’s Mark and Wellers are two of the most popular wheated bourbons at State & Allen’s restaurant and bar in Dallas, Texas.


Single Barrel Bourbon


Single barrel bourbon means that the bourbon in that barrel has never mingled with bourbon from another barrel. The trick to single barrel bourbon is that no two bottles are alike. The bourbon may taste different from bottle to bottle, depending on where that specific barrel was stored or what characteristics it took on from the barrel’s wood. Blanton is a great example of a single barrel bourbon if you want to try one at State & Allen.

Ready for something other than the standard house salad? Then order the Beet & Hazelnut Salad! Sliced pear, radish, orange slices, and goat cheese are layered on a bed of arugula, then topped with a pomegranate vinaigrette. It’s an adventurous salad that sounds strange – but tastes amazing.

Sandwich – Bison & Chorizo Grilled Cheese

This one has quickly become a new customer favorite and it’s easy to see why! The ooey gooey grilled cheese sandwich is taken up a notch with bison, chorizo, crispy onions, tomato, and Anaheim chile cheese for a little added kick. You have to taste it to believe how good it is!


Bistro Entrees – Seared Scallops

You don’t have to go to a fancy schmancy seafood restaurant to get top quality Dallas seafood! Our seared scallops are out of this world, served over a bed of cauliflower puree and accompanied by chorizo’d brussel sprouts.


Dessert – Homemade Spiced Baklava

State & Allen Kitchen + Bar is your Uptown stop for fabulous drink specials, great food, and a lively atmosphere. When you come in between 3-7pm, Monday-Friday, you’ll get deals like:

·      $3 Domestics: Budweiser, Miller Lite, Coors, etc.

·      $4 House Wines: We’ve got a great selection of house reds, whites, etc. that are perfect for any palette.

·      $3 Texas Trinity: We call it the Texas Trinity because you can get any drink mixed with Nue Vodka, Henderson Whiskey, or Dulce Vida Tequila for just $3.

If you haven’t tried our Texas Trinity spirits, it’s time you gave them a try!

Henderson Whiskey is a smooth whiskey crafted right here in Dallas, Texas. It needs no accompaniment and really is best ordered neat.  Dulce Vida Tequila is lauded as the Most Awarded Tequila. You’ll find that it’s organic, 100 proof, tequila, handcrafted with agave from the Los Altos highland region of Mexico. ·      Traditional Olive Branch Martini: Smooth, crisp Pearl Black vodka with just a splash of olive juice.

·      Green Martini: Pearl Cucumber vodka, muddled cucumber, a splash of lime juice, and a touch of simple syrup.

·      Paradise Martini: Fruity Pearl Plum vodka, with a splash of grape juice, and finished off with sparkling wine

·      Metroplex Martini: Pearl Pomegranate vodka, paired with just a splash of both orange juice and cranberry juice.

·      Chocolate Covered Cherry Martini: Pearl Black vodka, Crème de Cacao, Rumchata, and a little Grenadine.

·         Thursday: Texican Thursday. We put our flare of Tex Mex and give it to you for just $8.95 on Thursdays! Delicious, fresh, and infused with hints of international cuisine, our Texican special is a cut above the rest.

·         Friday: Beer Battered Fish & Chips. By Friday, you’ve earned the right to eat some fried comfort food. Hand dipped and then fried to golden perfection, our fish and chips will become a weekly staple. And at just $8.95, it’s easy on the wallet too.

·         Saturday & Sunday: Brunch Specials. Starting at 10am each Saturday and Sunday, come on in for our amazing brunch menu. Eggs, bacon, waffle, Bloody Marys, the works. And a bonus? All of our eggs come from Free Range chickens, ensuring the highest quality eggs.

Or are you in the mood for an Italian pasta? Our Oxtail and Sausage Bolognese is made with homemade pasta and a thick, rich tomato sauce. Served with asparagus, mozzarella toast, and a gremolata, this dish is amazingly rich and satisfying.

Need something lighter? Then go for the Love Love Chicken or Shrimp Bowl. Fresh and unique, the dish combines chicken or shrimp with risotto, cilantro, tomatoes, corn, bacon, and bell peppers, bathes it in a Sriracha butter sauce, and then tops it off with a fried egg.

Our Bistro menu is loaded with new dishes that are sure to become your new go-to favorites. What’s your favorite protein? We’ve got a little bit of everything, so there is something for everyone.

·         Chicken: Chicken and pasta, roasted chicken, spicy chicken and rice, we’ve got the variety you crave. Try our Tomato Braised Chicken with Mushroom Ravioli. Or maybe a little comfort food? Our half roasted chicken is served with buttery smashed potatoes, grilled corn, drizzled with a lemon, thyme sauce and homemade crispy onions. Perfect for a cold Fall evening.

·         Seafood: Fresh salmon, shrimp, and a variety of market fresh seafood are all served to please. Feeling adventurous? Go for the Proscuitto Wrapped Scottish Salmon. It’s flaky salmon wrapped in tender prosciutto and served with seasonal veggies, creamy polenta, and an arugula pesto. Or if you enjoy the traditional shrimp fettuccine, then try our take on it with sundried tomatoes and bacon.

·         Steak & Pork: Ask your server for our daily steak and Porterhouse Pork menus. Because our chefs are always on the look out for the best meats, our menus vary daily, bringing you the most tender, premium steaks.

The All-New Wine Menu is Here!

Just when you thought you’d tried all your favorite wines at State & Allen Bar + Kitchen, we’ve updated our wine menu with a whole new selection of amazing wines for you to try. Whether you like red, white, dry, sweet, or fruity, we’ve got something for everyone. And since we pride ourselves on carrying spirits and wines from the great state of Texas, here are some of the great Texas wines we are offering on the new menu that can be ordered by the glass or bottle:

·         Times 10 Sauvignon Blanc: Green apple, pear, and citrus flavors stand out in this crisp, refreshing white wine. It has the signature flavor you’d expect from a great white wine.

·         Tranquilo Viognier/Marsanne: A bold, nutty white wine with a rich color and a spicy aroma, coupled with hints of pear and honeysuckle. Texas wine at it’s finest.

In addition to offering these amazing Texas wines, we’ve also got a robust menu of both red and white wines from all over the world. Napa Valley, Argentina, Italy, Spain, Chile, etc. Glasses of wine range from $6.50-10.50 depending on the wine, and bottles start at $26 a bottle.

Looking for some drink specials? Don’t forget that on Wednesdays we offer all of our wines at HALF PRICE all day long. So that’s a great opportunity to try some of our more impeccable vintages. And during Happy Hour Monday-Friday – 3pm-7pm – we offer all of our house wines at $4 a glass.
